Air Fryer Tofu Satay with Peanut Sauce is a tasty vegan meal! The tofu is marinated in coconut milk and curry and paired with a peanut lime sauce.

First, remove the tofu from the package and drain. Use paper towels to wrap the tofu and pat the tofu dry to drain the moisture. You could also use a tofu press. I purchased mine from Amazon. The drier the tofu, the crispier!
Once you dry the tofu, cut it into 4 sections and cut each of the sections in half.
Now, make the tofu marinade. In a mixing bowl, combine coconut milk, coconut aminos, curry powder, ground ginger, garlic powder, salt and pepper. Pour marinade over the tofu. Cover and refrigerate for 15-25 minutes, depending on the time you have.
Once the tofu has marinated, lay the strips in your air fryer. Ensure you do not stack the tofu on top of each other or it will not get crispy.
Air fry the tofu at 400 degrees F for about 20-25 minutes.
While the tofu is cooking, make the peanut sauce. Whisk all ingredients for the peanut sauce together in a small bowl until the sauce is creamy.
Once the tofu has cooked, skewer each piece of tofu. I didn't have the patience to soak the bamboo sticks before cooking the tofu, so I skewered the tofu after it was cooked. You could ditch the skewers all together, but they do make the meal more fun!
Serve the skewered tofu sticks with the peanut sauce and enjoy!
